Unlike MMA (ufc) Muay Thai and Kickboxing are only stand up, once you're opponents on the floor you can't touch him.
Kickboxing is like a watered down westernised version of Muay Thai.
Muay Thai you can use your knees, elbows and grapple upright.
There are a range of different 'fight rules', A1, K1, Full-Thai-Rules, Modified-Thai-Rules. These all include or exclude things like elbows, knees, grappling times etc...
Muay Thai is how they fight in Thailand, usually a Muay Thai fight is fought to Thai fight music and has traditional Thai details about the pre-fight.
