    I love food.

    Yesterday for lunch I made fresh dates stuffed with blue cheese and choritzo sausages then wrapped in prosciutto - and grilled. Holy crap. They were awesome, and probably deadly.

    Not to mention expensive.

    Except that I can't stand dates (unless in fruit cake) it sounds wicked.

    Not really expensive... Dates were $18/kg and I only spent $7 on them.

    The rest was stuff we normally buy.

    I'm amazed that you can buy fresh dates in Auckland! I've never seen fresh dates in my life. Only the yucky sticky stuff from the supermarket which I hate.

    Yeah some are better than others. The ones I got yesterday weren't so fresh (ie sugary and sticky but not as much as dried dates).... but the fresh ones at Progressive Supermarkets are pretty good. I might try some markets in the weekend and see if I can find some other ones.

    don't think so, my MIL had fig trees growing on her farm in Auckland.

    No I just failed. I've wiki'd them since I posted. For some reason I'd always thought dates were dried figs, as prunes are to plums and raisins are to grapes. But then again, I don't like these things so it's not something I really am fully aware of.

    Butter Chicken

    Phase one: Chicken marinade
    1kg boneless skinless chicken breast cubed
    3 tbsp lemon juice
    2 tbsp chilli powder
    Pinch of salt
    1C yogurt- natural .
    ½ garam masala
    2 tbsp garlic paste
    2 tbsp melted butter
    2 tbsp ginger/garlic paste
    2 tbsp olive oil

    Put all the ingredients into a bowl and let it marinade overnight
    Next day place into an oven dish and grill until chicken is cooked and browned on edges.

    Phase two: Sauce
    1 tbsp butter
    1 tbsp garam masala
    1 tbsp ginger paste
    1 tbsp garlic paste
    1 tbsp chopped green chilli
    2 cup tomato puree
    1 tbsp chilli powder
    Salt
    1 tbsp honey
    ½ dried fenugreek leaves
    1 cup cream

    Melt butter and garam masala in a pan until it begins to crackle.
    Mix in ginger, garlic and green chilli- sauté until tender.
    Stir in tomato puree, chilli powder, and salt bring to the boil. Reduce heat to a simmer add in the honey and fenugreek leaves. Place the chicken mixture into the sauce mixture continue cooking. Stir in fresh cream- add more cream if needed.

    I will only make curry where you do the oil/butter/ghee with spices to make the paste.

    Favourite Curry EVER

    Food. Aloo_Palak Recipe is mine/indian woman I used to work with. Pic is stolen. Fuck it's the best curry ever.


    Aloo Palak (Spinach Potato)

    Spinach 1 bag
    2 potatoes
    1 Onion diced
    3-4 garlic cloves
    Small piece of ginger
    1 green chilli
    ½ tsp red chili powder
    1tsp of coriander powder, cumin powder
    1tsp of garam masala
    1tsp of cumin and turmeric
    1tbsp of butter
    Salt to taste

    Boil potatoes under just tender.
    Heat butter and diced onion over medium heat in a pan until onion JUST colours (not burned, not really browned)
    Add spices - cook until they bubble.
    Add crushed garlic, chopped ginger and fresh chilli
    Add spinach - cook until just wilted (ie you want it to remain bright green, rather than dark... so not all of it has to wilt)

    Chuck into a blender... and blend until smooth.

    Put back into pan,and add chopped boiled potatoes. Simmer.

    Add cream/sour cream/yogurt to taste.

    Naan
    2 Tbsp Warm water
    1 teasp Sugar
    1 Packet active dry yeast
    Mix together and allow to rise for about 10 minutes in a warm place.

    Mix together:
    ¼ C Yogurt (natural)
    ¼ C Warm Milk
    4 Tbsp Melted butter
    3 C Flour
    1 teasp Salt
    ½ teasp Baking powder
    ½ teasp Poppy seeds
    Add yeast mixture and knead for approx 10 minutes
    Place into a lightly oiled bowl and cover. Let the mixture rise for about 5 hours in a warm place (doubled in size)
    Knead again for about 2 minutes
    Cut into 6 equal portions and roll out flat
    Pre heat oven to the hottest temp and have the rack on the lowest setting
    Place naan into hot oven and turn once first side is cooked
    Brush with garlic butter
    Eat and enjoy
